“Lowbrow” in Filipino means “pang-masa.” We like to make food that most people love to eat. We like to open in malls. We try to stretch our concepts a bit outside the norms. Our brands:

- We only do original concepts.
- We do “upscale casual” space because it offers accessibility and healthy margins.
- We like high-quality with few choices.
- We don’t outsource design and product R&D. We like inventing.
- We avoid promos.
- We build original concepts that don’t fit into typical categories. Or if we’ll enter a category, we aim to be number one.
- We try to find a balance between critics (the people who like tasting menus) and the mass market (the people who like buffets).
- We’re openly demanding of our people. We enforce high standards and we run a tight ship.
